However, the actual texture, as shown in the picture, is tender and soft, with the tendon perfectly cooked to a melt-in-your-mouth consistency. For just 100 NTD, you get a generous serving of 5-6 pieces of beef.
Although it doesn’t claim to be some kind of "premium" beef noodle dish, in recent years, many beef noodles on the market have become increasingly flashy and overhyped. In contrast, the flavor of this soup and noodles truly reminds me of the beef noodles I used to have as a child—a taste that’s simple yet unforgettable.

前往其實很好找,因為隔壁三角窗清一色牛肉麵的招牌很顯眼,就正隔壁。
雖然是家小麵館,但吃飯時間生意都挺不錯的,感覺應該以老主顧為大宗。
The Zheng Chuan Wei Beef Noodle Shop, located at the intersection of Chongqing Road and Gansu Road, is not my first visit for a meal. It’s actually very easy to find—right next door is a prominent triangular corner with a row of eye-catching beef noodle signs, making it unmistakable.

雖然是家小麵館,但吃飯時間生意都挺不錯的,感覺應該以老主顧為大宗。

家滷味是畫菜單點的,所以不用站在滷味台旁邊先點用。

闆娘其實也厲害,真看得出來我小鳥胃????XD 反正後來就崇善如流接受他的建
議點到為止,我還記得有次去"麵沒吃完"也有被"關心"一下............
When dining alone, my usual routine is to order a small bowl of beef noodles. I initially planned to order two extra side dishes to make the presentation more visually appealing for photos, but the boss lady suggested that I might not finish everything since I already had two side dishes. Honestly, she’s quite sharp—she could tell I have a "bird stomach" (small appetite)! 😂 XD
In the end, I took her advice and stopped at what I’d already ordered. I still remember one time I didn’t finish my noodles, and she came over to "check on me" out of concern…! 😅

泡菜(30元) 印象中他們家的泡菜不是正統四川泡菜,是用糖醋泡出來的台式泡
菜,不過基本上這泡菜的酸甜度我覺得還挺OK,不會太酸也不會太甜膩,吃起
來算爽脆美味。高麗菜的切法其實也會左右賣相,像這種切法口感就很好。
Taiwanese-style pickled cabbage (30 NTD)
From what I recall, their kimchi isn’t the traditional Sichuan-style version but rather Taiwanese-style pickled cabbage made with a sweet and sour marinade. That said, I think the balance of sourness and sweetness is pretty good—it’s neither overly sour nor cloyingly sweet. The texture is crisp and tasty. Even the way the cabbage is cut makes a difference in presentation, and this cutting style enhances both the appearance and the mouthfeel.

The braised beef tripe is relatively average in terms of presentation. Since it wasn’t sliced thinly enough, the portion size doesn’t seem very generous. However, the texture was handled quite well, achieving a good balance of softness and firmness, and the tripe absorbed the braising sauce nicely.

The broth for the beef noodles follows a Sichuan-style flavor profile, so the base soup has a slight hint of spiciness, at least in my opinion. Although it’s a small bowl, there are still about 5-6 pieces of beef in it, which is quite generous. Considering how expensive beef is these days, this level of sincerity is truly commendable.

To be honest, because I’ve had braised beef at other places before that looked similar but turned out to be tough and dry, I was initially skeptical when I saw this piece of meat. However, upon closer inspection, the beef tendon on the meat had a semi-transparent appearance, which suggested it had been braised to a soft, tender texture. I figured it probably wouldn’t disappoint—and it didn’t!

果然這牛肉一咬開,裡面藏的玄機就讓我暗自竊喜踢到寶。這牛肉不但一點都
不硬,反而是肉軟筋爛,你看到一絲一絲的牛筋了嗎?吃這牛筋免用牙唷。本來
看外表的顏色感覺牛肉也許會太鹹,吃完的感想一點都不會,挺剛好。
Sure enough, as soon as I bit into the beef, I was pleasantly surprised to discover the hidden treasure within. The beef is not tough at all; instead, it’s tender and fall-apart soft, with perfectly cooked tendon that you can see in those delicate strands. You don’t even need to use your teeth to enjoy this tendon! At first glance, the darker color of the beef might make you think it would be overly salty, but after tasting it, I found the seasoning to be just right—perfectly balanced.

樣乾淨囉。雖然當天是第一餐有點餓,不過是真的挺不錯吃才有辦法讓我完食。
面對市面上殺到一片血流成河,不惜重資用料練湯,然後一碗吃起來天價的牛
肉麵,有時候真的覺得這種家裡隔壁麵攤的麵,會更有味道!
I specifically took this photo of my empty bowl at the end because it’s been such a long time since I’ve been to a place where I could finish everything this clean. Although it was my first meal of the day and I was a bit hungry, the truth is that it was genuinely delicious enough for me to leave nothing behind.
In today’s market, where beef noodle shops compete fiercely—spending exorbitant amounts on ingredients and broth to justify sky-high prices—sometimes I really feel that these simple, humble noodles from a neighborhood noodle stand have a much more satisfying flavor!
