When visiting Hsinchu Hukou Old Street, besides admiring the quaint architecture and rich Hakka culture, don't forget to seek out the hidden culinary gems! Today, I'm recommending "Xiao Wo Kou," a wood-fired pizza place that combines local ingredients with creative culinary flair.

這家店就位在湖口天主堂旁, 由年輕老闆經營, 他們不僅用心製作美味
的披薩, 也積極推廣湖口的地方文化和歷史, 讓更多人認識這個美麗的
小鎮。

This restaurant, located right next to Hukou Catholic Church, is run by a young entrepreneur. Not only are they passionate about creating delicious pizzas, but they're also actively involved in promoting the local culture and history of Hukou, introducing more people to this charming town.

湖口老街:從清代鐵道碼頭到繁華老街
Hukou Old Street: From a Qing Dynasty Railway Station to a Bustling Old Street

湖口老街的歷史可以追溯到清朝時期,當時的湖口只是一個名為「大湖口」
的偏僻小村落。 1893 年, 隨著清朝政府修建台北到新竹的鐵路, 並在
口設立「大湖口火車碼頭」車站,  湖口才逐漸發展起來。  火車站的設
立帶動了湖口的交通、 商業和人口發展, 使湖口從一個偏僻的小村落發
展成為重要的城鎮, 並形成了以三元宮為中心的「新街」, 也就是現在
的湖口老街。  老街上保留了許多巴洛克式的建築,  以及濃厚的客家文化,  
是來到湖口必訪的景點之一。

Hukou Old Street's history traces back to the Qing Dynasty when Hukou was just a remote village called "Dahuokou." In 1893, with the construction of the Taipei-Hsinchu railway by the Qing government and the establishment of the "Dahuokou Railway Wharf" station in Hukou, the area gradually began to develop.  The establishment of the railway station boosted transportation, commerce, and population growth in Hukou, transforming it from a remote village into a significant town. A "New Street"  formed, centered around the Sanyuan Temple , which is now known as Hukou Old Street. The old street preserves many Baroque-style buildings and a rich Hakka culture, making it a must-visit attraction in Hukou.

Hukou Catholic Church: A Church Built on the Ruins of a Qing Dynasty Railway

「小窩口柴燒窯烤披薩」就位在湖口天主堂的旁邊,這座教堂建於 1950 
年代,是湖口的地標之一。 教堂的建築風格融合了 Gothic 和 Romanesque 
元素,非常雄偉壯觀。 更特別的是,教堂的所在地,以前是清朝時期鐵
道的最南端, 見證了湖口的歷史變遷。 

Xiao Wo Kou Wood-Fired Pizza is located right next to Hukou Catholic Church. This church, built in the 1950s, is a landmark of Hukou. Its architectural style is a blend of Gothic and Romanesque elements, making it quite grand and imposing.  What's even more special is that the church stands on the site of the southernmost point of the Qing Dynasty railway, bearing witness to Hukou's historical changes.

而在天主堂的廣場上, 還展示了一台 M41 戰車,  這台戰車是 中華民國
陸軍曾經使用的輕型坦克,  也是湖口天主堂的一大特色。

And in the square in front of the church, there's an M41 tank on display. This tank was a light tank once used by the Republic of China Army, and it's a major feature of Hukou Catholic Church.

「小窩口柴燒窯烤披薩」的店面, 前身是湖口天主堂的辦公室和幼稚園,  
至今已有  70  多年的歷史。  年輕老闆保留了老屋的格局和部分建材,  
例如  truss  結構的屋頂和磨石子地板, 並加入了現代的元素,例如木質
吧檯和桌椅,打造出一個融合新舊、充滿文藝氣息的空間。

"Xiao Wo Kou Wood-Fired Pizza" occupies a building that's over 70 years old, formerly the office and kindergarten of Hukou Catholic Church. The young owner has thoughtfully preserved the original layout and some of the building materials, such as the truss-structured roof and terrazzo flooring.  They've also incorporated modern elements like a wooden bar and furniture, creating a space that blends old and new with an artistic touch.

喏大的廣場提供顧客免費停車,假日也會收費開放給去老街的觀光客。

The large square provides free parking for customers, but on holidays, it's open to tourists visiting the old street for a fee.

製作PIZZA的廚房,在門口旁的一間木造工寮內,因為爐火營業時間要
保持不滅,所以空氣中會瀰漫一股燒柴的烟氣,我個人是感覺滿香的。
如果廚房不忙的話,跟老闆打個招呼都可以自由進去參觀。想拍照老闆
也都很大方,打個招呼就可以了。

The pizza kitchen is in a small wooden shed near the entrance. Because the wood-fired oven needs to be kept burning throughout operating hours, the air is filled with the smoky fragrance of burning wood, which I personally find quite pleasant. If the kitchen isn't too busy, you can ask the owner if you can take a peek inside. The owner is also very open to letting you take photos; just let them know beforehand.

手工石窯當然是特色,老闆選用龍眼木作為燃料, 讓披薩帶有淡淡的
木頭香氣, 吃起來更有層次。

The handmade stone oven is certainly a distinctive feature. The owner uses longan wood as fuel, which imbues the pizzas with a subtle woody fragrance, adding another layer of complexity to the taste.

傳統的窯烤技術使用高溫火爐,通常溫度高達400°C以上,這樣的溫度
可以讓披薩的餅皮快速膨脹且形成酥脆的外皮,同時內部仍保持柔軟
有嚼勁。所以窯烤PIZZA烤的時間相當快,記得好像都是算秒的~

Traditional wood-fired ovens reach scorching temperatures, typically exceeding 400°C (752°F). 1  This intense heat allows the pizza dough to rise quickly and develop a crispy crust while keeping the inside soft and chewy. 2  As a result, pizzas cook incredibly fast in these ovens; I seem to recall the baking time being measured in mere seconds.

古色古香的木造工寮,搭上石窯一整個感覺超有味道也帶點復古的野趣,
待在裏頭很像自己置身什麼深山中的秘密景點一樣,但其實人離新竹市區
也不過30分鐘車程。

The quaint, old-fashioned wooden shed, paired with the stone oven, creates a charming and somewhat rustic atmosphere. Being inside feels like you've stumbled upon a hidden gem deep in the mountains, even though you're only a 30-minute drive from downtown Hsinchu.

入口處是店裡的吧檯及用餐區,這裡以前是天主堂的辦公室,至今已有
70 多年的歷史。

The entrance leads to the restaurant's bar and dining area, which used to be the Catholic Church's office. This building has a history of over 70 years.

年輕老闆保留了老屋的格局和部分建材, 並加入了現代的元素,如木質
吧檯和桌椅,打造出一個融合新舊、充滿文藝氣息的空間。

The young owner has preserved the layout and some of the original building materials, incorporating modern elements like a wooden bar and tables and chairs to create a space that blends the old with the new and has an artistic vibe.

這家店的披薩, 最大的特色就是結合了在地食材和客家元素, 研發出
許多獨特的口味,例如:

剝皮辣椒皮蛋披薩: 將客家經典食材剝皮辣椒和皮蛋 融入披薩,口感豐
富, 微辣開胃。
酸菜牛肉披薩: 使用客家傳統的 酸菜 和 牛肉 作為餡料 酸香夠味 與披薩
餅皮非常對味。
客家鹹豬肉披薩: 將客家鹹豬肉,搭配 蒜苗 和 辣椒,鹹香夠味,非常開胃。
九層塔野菇披薩: 使用新鮮的 九層塔和野菇,搭配 mozzarella cheese,香
氣十足, 口感豐富。
蜂蜜起司披薩: 簡單的蜂蜜和起司 組合,卻是大人小孩都喜歡的經典口味。

What sets this pizzeria apart is its fusion of local ingredients and Hakka elements, resulting in a variety of unique and innovative pizzas. Here are a few examples:

Pickled Pepper and Century Egg Pizza: This pizza combines classic Hakka ingredients like pickled peppers and century eggs for a rich and slightly spicy flavor that's sure to awaken your taste buds.

Preserved Mustard Green and Beef Pizza: Featuring traditional Hakka preserved mustard greens and beef as toppings, this pizza offers a delightful balance of sour and savory flavors that complement the crust perfectly.

Hakka Salted Pork Pizza:  This pizza showcases Hakka salted pork with garlic chives and chili peppers for a savory and satisfying experience.

Nine-Story Pagoda and Wild Mushroom Pizza: With fresh basil, wild mushrooms, and mozzarella cheese, this pizza is bursting with aroma and flavor.

Honey Cheese Pizza:  A simple yet classic combination of honey and cheese that's beloved by both adults and children.

這次在小窩口吃到的口味,是他們家的「酸菜牛肉披薩」! 🍕  

This time at Xiao Wo Kou, I tried their "Preserved Mustard Green and Beef Pizza"!

手工薄餅皮鋪上滿滿的酸菜和牛肉片,再撒上 mozzarella cheese,最後放
進柴燒窯烤爐烘烤。🤤🤤🤤  熱騰騰的披薩一上桌,酸菜的香氣撲鼻而
來,餅皮烤得酥脆,酸菜和牛肉的組合意外地搭,酸香夠味,非常涮嘴!
😋😋😋  而且 10 吋只要 360 元,其實不算貴!👍  

The handmade thin crust is generously topped with preserved mustard greens and beef slices, then sprinkled with mozzarella cheese before being baked to perfection in the wood-fired oven. 🤤🤤🤤 As soon as this piping hot pizza arrives at your table, the fragrant aroma of the preserved mustard greens fills the air. The crust is perfectly crispy, and the combination of mustard greens and beef is surprisingly harmonious, creating a tangy and savory flavor that's incredibly moreish! 😋😋😋 And at only 360 NTD for a 10-inch pizza, it's actually quite a good deal! 👍

PIZZA的餡料採用道地客家酸菜、以及肥牛肉片,酸菜跟牛肉其實本身
搭配起來就沒有違和感,但放到西式的PIZZA餅上面真的還是頭一回看
到,而且味道實在棒。其實我後來有跟老闆詢問把酸菜用福菜替代,可
能客家的風味會更強烈?後來老闆回答我說,因為福菜在客家庄跟韓國
泡菜一樣都是每一家各自做,風味跟品質都略有不同,因此貨源不穩,
所以最後選用比較普遍的酸菜。這樣講我也是可以理解,畢竟比較稀有
的食材能拿到貨就不容易了,更別說要求品質穩定可以理解~
下次來湖口老街,別忘了到小窩口柴燒窯烤披薩嚐嚐這道創意客家風味
的披薩,下次我想試試客家鹹豬肉口味的!😉

The pizza toppings include authentic Hakka preserved mustard greens and slices of fatty beef.  Mustard greens and beef are a natural pairing, but this is the first time I've seen them on a Western-style pizza. And the taste is truly fantastic.

I actually asked the owner later if substituting the mustard greens with "fu cai" (fermented mustard greens) might create an even stronger Hakka flavor. The owner explained that, similar to kimchi in Korea, every family in Hakka communities makes their own "fu cai," resulting in variations in flavor and quality, which makes sourcing it reliably difficult. So they ultimately decided to use the more common preserved mustard greens instead. I can understand this reasoning. After all, it's not easy to procure rarer ingredients, let alone ensure consistent quality.

Next time I'm in Hukou Old Street, I'll definitely revisit Xiao Wo Kou to try their Hakka Salted Pork pizza! 😉

家鄉湖口, 開了這家披薩店。  他們不僅用心製作美味的披薩,  也希望
透過美食, 讓更多人認識湖口的地方文化和歷史。

The young owner of "Xiao Wo Kou Wood-Fired Pizza" gave up a stable job to return to their hometown of Hukou and open this pizzeria. Not only are they passionate about creating delicious pizzas, but they also hope to use their food as a way to introduce more people to the local culture and history of Hukou.

更棒的是,年輕老闆非常熱情好客, 如果時間允許,  們還會主動為顧客
介紹披薩的特色、 食材的來源, 以及湖口的歷史文化。 下次到這邊用餐,

What's even better is that the young owners are incredibly welcoming and hospitable.
