新明老牌牛肉麵,我記得以前年大學的時候同學帶我來,好像是在隔壁
永川牛肉麵那個店面?查了一下資料原來"新明"兩字以前因為在新明市場
旁又沒有店名,所以是顧客間的"俗稱"。而永川則是創始店為了紀念來
自四川的兩位創始人,才取名"永川",而現在隔壁的新明則是學徒出去
開的。如果有興趣看官方全文,可以參考原文連結。我自己的感覺則是
現在"新明牛肉麵"就差不多跟"清水米糕"、還是"民雄鵝肉"這種名稱感覺
一樣,已經不適指單店,而是一種小吃料理的通稱。
Xinming Old Brand Beef Noodles, I remember when my classmate brought me here during my university years, it seemed to be in the shop next to Yongchuan Beef Noodles at that time? After checking some information, I learned that the name 'Xinming' was used because the shop was located next to Xinming Market and didn't have a formal name, so customers got used to calling it that. Yongchuan Beef Noodles, on the other hand, is the original shop, named 'Yongchuan' to commemorate the two founders from Sichuan. The current Xinming Beef Noodles next door was opened by an apprentice at that time. My own feeling is that now 'Xinming Beef Noodles' has become a general term for a kind of snack, like 'Qingshui Rice Cakes' or 'Minxiong Goose', rather than just referring to the name of a single store. 菜單上的選擇主要就是牛肉麵、一些基本款湯麵、水餃和一些小菜。
小菜放在冰箱裏面,有需要請自行選擇取用。
The menu mainly offers beef noodles, some basic noodle soups, dumplings, and a selection of side dishes. The side dishes are stored in the refrigerator; please feel free to choose and take what you'd like.

麵類的價目表就在你吃麵的桌上,我這是2021年的價格,目前牛肉麵應
該一碗已經來到140元了。

晚餐吃這樣,其實不管分量跟豐富都都很好啊~
For dinner, this is actually great in terms of both portion size and variety.

滷牛肚的口感彈牙脆口,滷汁入味越嚼越香。
The braised beef tripe has a chewy and crunchy texture, and the braising liquid seeps into it, making it more fragrant with every chew.

泡菜口感相當爽脆,記得應該是自然發酵的四川泡菜,非台式加糖醋的
作法。
The kimchi has a very crisp texture, and I believe it's naturally fermented Sichuan kimchi, not the Taiwanese style with added sugar and vinegar.

牛肉麵的湯頭上面漂浮著一層紅油,呈現深紅色,很經典的川味,散發
出濃郁的香氣。舀一勺入口,麻、辣、香、鹹各種滋味在舌尖上跳躍,
層次分明。
The broth of the beef noodles has a layer of red oil floating on top, exhibiting a deep red color, a classic Sichuan flavor, and emanating a rich aroma. Taking a spoonful, the flavors of numbness, spiciness, fragrance, and saltiness dance on the tip of the tongue, with distinct layers.

酸菜店家不是整盒放桌上讓客人自己加,而是已經事先分裝成小包。
The pickled cabbage isn't placed on the table in a whole box for customers to add themselves, but rather pre-portioned into small packets.

酸菜的味道沒有太多其他調味,不會搶了麵的味道。
The pickled cabbage doesn't have too many other seasonings, and it won't overpower the taste of the noodles.

看這一碗麵上面滿滿的料,幾乎都看不到下面的麵,真的心情就是一個
爽字形容最貼切。
Looking at this bowl of noodles with so much stuff on top, you can barely see the noodles underneath, and it really makes you feel good.

肉量多又大塊,以我的食量,光把肉吃完就飽一半了。
The meat is plentiful and large, and with my appetite, just eating the meat alone fills me up halfway.

我這一碗還有吃到牛筋唷。
I also got to eat some beef tendon in my bowl.

肉塊燉煮得非常軟嫩入味,咬下去幾乎入口即化。雖然原創店是隔壁,
但這家的麵也是煮得非常到位了。
The meat chunks are stewed to a very tender and flavorful consistency, almost melting in your mouth when you bite into them. Although the original shop is next door, the noodles here are also cooked to perfection.

麵條則是粗而有嚼勁,吸附了湯汁,每一口都是享受。如果擔心湯不夠,
店家加湯加麵都不用錢,歡迎多多利用。
The noodles are thick and chewy, soaking up the soup, and every bite is a delight. If you're worried about not having enough soup, the restaurant offers free soup and noodle refills, so feel free to take advantage of that.
