台中美食向來臥虎藏龍,這次要介紹的是去年底新開位於市區台灣大道
一段尾、文正派出所旁邊的菊一壽司。它以親民的單點消費,提供日本
料理餐廳等級的頂級食材,讓人驚豔不已。
Taichung's culinary scene is full of hidden gems, and this time we're introducing Kikuichi Sushi, a new restaurant that opened at the end of last year. Located in the city center at the end of Section 1 of Taiwan Boulevard, next to the Wenzheng Police Station, Kikuichi Sushi offers top-quality ingredients comparable to those of high-end Japanese restaurants, but with affordable à la carte pricing, making it a delightful surprise.

坦白說這家店開在這邊其實挺冒險的,第一他這邊是沒落的舊市區,第二
他開在警局旁邊過路客本就不多,只能期待斜對面新落成的新大樓社區有
住戶還有附近飯店拉皮完重新營業帶來旅客之後,能增加一些客源囉。我
這天是星期天晚上的6點用餐時間前往,別說排隊了,客人根本小貓兩三隻。
真的替他們的生意感到憂心,因為這真的是一家很好吃又實惠超值的店。
To be honest, opening a restaurant in this location is quite a gamble. First, it's a declining older part of the city. Second, being next to a police station means there's not much passing foot traffic. They can only hope that the newly completed residential buildings across the street will bring in residents, and that the nearby hotels, after renovations and reopenings, will bring in tourists to increase their customer base. I went there on a Sunday evening at 6 PM, during dinner time, and there was no line, barely any customers at all. I'm genuinely worried about their business because this is truly a delicious and cost-effective restaurant.

店內座位是沙發配置,座位很寬敞但相對也因為桌椅比較大套,犧牲了
許多可以再放座位的空間。然而,菊一壽司的現場空間配置,卻是其一
大缺點。吧檯設置過於靠後,導致服務人員與客人之間的距離較遠,互
動性較低,有時會感到服務的疏離感。此外,門口沒有接待人員,對於
初次到訪的客人,可能會感到有些不知所措。
The restaurant features sofa seating, which is spacious, but the larger size of the furniture takes up space that could have been used for more seating. However, Kikuichi Sushi's layout has a major drawback. The bar counter is set too far back, creating a greater distance between staff and customers, reducing interaction and sometimes leading to a feeling of service detachment. Additionally, there is no host at the entrance, which might leave first-time visitors feeling a bit lost.

店裡供應的壽司種類五花八門,稍微看一下品項都是基本款居多,沒有
特別高檔的食材出現。我想這應該是店家一開始設定就是迴轉平價壽司
等級的關係。
The restaurant offers a wide variety of sushi, but a quick glance at the menu reveals mostly basic options, with no particularly high-end ingredients. I believe this is because the restaurant was initially set up to be a conveyor belt sushi place with affordable pricing


點餐採用網頁讓客人自己用手機點餐,點完送出之後服務人員會把帳單
送到桌上來,並供應幾包哇沙米芥末醬給客人。這邊有需要追加芥末醬
都要跟服務人員拿,但是服務人員沒事都站在後面吧檯旁,很不方便。

這天其實沒有很餓,就隨便點幾樣自己愛吃的,全部520元,我覺得比
現在品質越來越差的日本連鎖品牌郎的優質多了。順帶一提,菊一壽司
的價格跟盤子的花色無關喔,這可能是原本設定迴轉壽司後來臨時更改
營業型態,但是盤子早已製作完成的關係。
I wasn't very hungry that day, so I just ordered a few of my favorites. The total came to NT$520. I think it's much better quality than those Japanese chain brands that have been declining in quality lately.By the way, the prices at Kikuichi Sushi are not related to the color of the plates. This is probably because they originally planned to be a conveyor belt sushi restaurant and then changed their business model, but the plates were already made.

紋甲花枝(60元/2貫)的特色是其Q彈的口感和鮮甜的滋味,是非常講求鮮
度的食材。菊一壽司的紋甲花枝新鮮度高,口感彈牙,鮮甜的滋味在口
中散發開來。
The distinguishing feature of cuttlefish (NT$60 for 2 pieces) is its chewy texture and sweet taste, making it an ingredient that demands high freshness. The cuttlefish at Kikuichi Sushi is very fresh, with a bouncy texture, and the sweet taste spreads in your mouth

澎湖產剝皮魚(80元/2貫)肉質細膩,口感清爽,是製作生魚片的上佳選擇。
菊一壽司採用本產澎湖剝皮魚,魚肉非常鮮才能做成生魚片,專業級刀工
處理得恰到好處,保留了其原有的鮮甜和細膩,讓人回味無窮。
Pescadore peeled fish (NT$80 for 2 pieces), known for its delicate texture and refreshing taste, is an excellent choice for sashimi. Kikuichi Sushi uses local Pescadore peeled fish, which is so fresh that it can be served as sashimi. The chef's professional knife skills are just right, preserving its original sweetness and tenderness, leaving a lingering aftertaste.

赤貝(80元/貫)的特色是其鮮紅的色澤和爽脆的口感。菊一壽司的赤貝不僅
外觀誘人,其肉質也十分飽滿,每一口都能感受到貝類的鮮甜和海洋的風
味,雖然一貫就要價80元所費不貲,但一分錢一分貨,跟日本連鎖品牌郎
的版本一比,高下立見。

Compared to the versions from Japanese chain brands, the difference in quality is immediately apparent.

Kikuichi Sushi's straw-smoked bonito undergoes meticulous smoking, truly reaching the level of high-end Japanese cuisine. It preserves the freshness of the bonito while adding a distinctive smoky flavor, truly testing the skill of the sushi chef.

鮭魚卵軍艦(60元/2貫)以其爆漿的口感和濃郁的鮮味著稱。菊一壽司的
鮭魚卵新鮮飽滿,給的份量也很足。入口時鮭魚卵在口中爆開,濃郁的
鮮味瞬間充滿整個口腔。現點現做的關係,海苔片也都還是脆的唷~
Ikura gunkan (NT$60 for 2 pieces) is known for its bursting texture and rich umami flavor. The ikura at Kikuichi Sushi is fresh, plump, and generously portioned. When you bite into it, the ikura bursts in your mouth, and the rich umami flavor instantly fills your entire oral cavity. Because it's made to order, the seaweed sheets are still crispy.

特別推薦「螃蟹味噌湯」。一碗僅需100元,卻能品嚐到半隻螃蟹的鮮美,
湯頭濃郁,蟹肉飽滿,絕對是物超所值。這個在日本迴轉壽司店以平價方
式供應很常見,但在台灣比較難吃到,尤其是台中應該是首見吧!
Highly recommend the 'Crab Miso Soup.' For only NT$100, you can enjoy the deliciousness of half a crab. The soup is rich, and the crab meat is plump, truly offering excellent value for money. This is commonly found in Japanese conveyor belt sushi restaurants at affordable prices, but it's relatively rare in Taiwan, and likely the first of its kind in Taichung!
儘管空間配置和服務方面有待加強,但菊一壽司的食材新鮮度和美味程度,絕對能彌補這些不足。好店真的要多給他鼓勵,對於追求頂級食材、喜歡日本料理的朋友,菊一壽司絕對值得一試。
Despite the room layout and service needing improvement, Kikuichi Sushi's ingredient freshness and deliciousness definitely make up for these shortcomings. Good restaurants really deserve encouragement. For those who seek top-quality ingredients and enjoy Japanese cuisine, Kikuichi Sushi is definitely worth a try.
