第二代。這不僅是一家牛肉麵店,更像是見證我成長歲月的鄰家老友,看著
板橋後站的繁華與變遷,大庭牛肉麵始終如一地飄香,以其獨特的紅燒湯頭
和實在的用料,成為在地人心中的經典美味,更是許多夜貓子和加班族宵夜
的首選。尤其在台北牛肉麵一碗動輒180~200元以上的物價水準下,依然堅
持平實價格,更顯得難能可貴。

走進大庭牛肉麵,簡單的門面寬敞明亮,一點都沒有歲月的老態,要不是
寫文章找資料,我這外地人還不知道這家店竟然跟我一樣50歲了。
Walking into Da Ting Beef Noodles, the simple facade is spacious and bright, showing no signs of age. If I hadn't looked up information for this article, I, as an out-of-towner, wouldn't have known that this restaurant is actually 50 years old, just like me.

櫃台邊的的小菜玻璃櫥,琳瑯滿目地展示著各式各樣的美味小菜,讓人
食指大動。稍微觀察一下,都是麵店常見的基本款小菜~
The glass display case by the counter showcases a dazzling array of delicious side dishes, making one's appetite surge. Upon closer inspection, it seems they offer the standard, quintessential side dishes commonly found in noodle shops.



除了招牌牛肉麵,大庭牛肉麵的小菜也可以嚐嚐。首先是清爽開胃的涼拌
小黃瓜,45元的價格能品嚐到爽脆多汁的小黃瓜,以酸甜的醬汁調味,
恰到好處調味,讓人很刷嘴。
In addition to their signature beef noodles, Da Ting Beef Noodles also offers a selection of side dishes worth trying. First up is the refreshing and appetizing cold cucumber salad. At a price of NT$45, you can enjoy crisp and juicy cucumbers seasoned with a sweet and sour sauce, perfectly balanced and utterly addictive.

接著是酸甜解膩的「台式泡菜」,40元的價格,就能品嚐到店家自製的
泡菜,清脆爽口,酸甜適中,搭配牛肉麵一起享用,更是絕配。雖然不是
我喜歡吃的自然發酵版本,不過豐富的配色跟恰到好處的酸甜,菜都有入
味,算是好吃版本的。
Next up is the sweet and sour "Taiwanese Kimchi," priced at NT$40, offering the chance to savor the restaurant's homemade kimchi. Its crisp and refreshing texture, coupled with a perfectly balanced sweet and sour flavor, makes it an ideal accompaniment to their beef noodles. Although it's not the naturally fermented version I personally prefer, the vibrant colors and just-right sweet and sour notes, with the vegetables well-infused with flavor, make it a delicious rendition.

如果想單獨品嚐滷牛肉的美味,不妨點一份「滷牛肉」,80元的價格,
就能品嚐到店家精心滷製的牛肉,入味軟嫩,香氣十足,份量十足,在
台北地區來說,真的是佛心價!
If you'd like to savor the deliciousness of braised beef on its own, consider ordering a plate of "Braised Beef." At NT$80, you can enjoy the restaurant's meticulously braised beef, tender and flavorful, boasting a rich aroma and generous portion—truly a steal in the Taipei metropolitan area!

The star of the show is, of course, their signature "Braised Beef Noodles"! At a price of NT$160 for a small bowl, you can savor a hearty and delicious bowl of beef noodles. The soup base is a rich and fragrant broth, simmered by the restaurant using beef bones and a variety of Chinese medicinal herbs.

老闆從市場親自採買新鮮牛花腱肉,刀切2公分厚,先汆燙再煮熟,後爆
炒辛香料、豆瓣醬等佐料,用紅燒的手法加入牛大骨滷湯中一起滷製,
多重繁複手工,造就了湯頭清爽而不油膩的獨特風味。牛肉是精選的半筋
半肉,大塊軟嫩,入口即化,帶有豐富的膠質,讓人回味無窮。
The owner personally selects fresh beef shank from the market, slicing it to a thickness of 2 centimeters. It is first blanched, then cooked, followed by a stir-fry with fragrant spices, fermented broad bean paste, and other seasonings. This is then braised using a red-braising method, combined with a beef bone broth, resulting in a light and non-greasy soup with a unique flavor. The beef is a carefully chosen half-tendon, half-meat cut, large, tender, and melt-in-your-mouth, with a rich collagen content that leaves a lasting impression.

麵條Q彈有嚼勁,吸附滿滿的湯汁,多款麵條供客人選擇,每一口都是
