重生,重新開張!
"Zheng Laopai Qingshui Rib Noodles" on Fuxing Road in Taichung is a taste cherished in the memories of many long-time Taichung residents.
This venerable establishment, which originated in Fengyuan and has been a fragrant fixture in Taichung for nearly 50 years, tragically suffered a fire at the end of 2022, causing much regret among its many loyal patrons. However, amidst everyone's anticipation, the old establishment has finally risen from the ashes and reopened!

2022年底,店家在廚房炸排骨酥時,因用火不慎引發火災,火勢延燒周
邊民宅,一度停業好一段時,其實我都覺得是不是就這樣沒了?不過店家
後來在整修後重新開張,以不變的美味迎接老顧客。
At the end of 2022, the establishment suffered a fire due to careless use of fire while frying pork ribs in the kitchen, with the flames spreading to nearby residences, causing a temporary closure for quite some time. To be honest, I even wondered if it was gone for good. However, the establishment later reopened after renovations, welcoming back old customers with the same unchanged deliciousness.

店裡除了排骨麵跟乾麵乾米粉,沒有其他產品。目前排骨麵一碗已經來
到100元,不過以他們家的份量,100元都還是可接受範圍之內。
The restaurant offers only pork rib noodles, dry noodles, and dry rice noodles, with no other products. Currently, a bowl of pork rib noodles costs NT$100, but given their generous portions, this price is still considered reasonable.

正老牌清水排骨麵的招牌當然是那份量十足的排骨麵。大塊的排骨酥炸
至金黃,再放入蒸籠裡面蒸煮出原汁,上桌前桌碗再兌以豬大骨熬製的
湯頭,原汁原味呈現。
Zheng Laopai Qingshui Rib Noodles' signature dish is, of course, their generously portioned rib noodles. Large pieces of ribs are deep-fried to a golden brown, then steamed to extract their original juices. Before serving, the bowl is filled with a broth made from simmered pork bones, presenting the authentic, original flavor.

他們家的排骨肉挺大塊的,不過吃起來的時候感覺碎骨較多是美中不足
之處。
Their rib pieces are quite large, but a minor drawback is that there seems to be quite a few small bone fragments when eating them.

排骨酥已經燉到相當軟爛,輕輕一咬即骨肉分離。排骨肉都有醃漬入味,
吃起來帶著濃濃的蒜香,古早味十足~
The ribs have been stewed until they are quite tender, with the meat easily separating from the bone with a gentle bite. The rib meat is thoroughly marinated, offering a rich garlic aroma, full of old-fashioned flavor.

湯頭則濃郁鮮甜,搭配Q彈的麵條,每一口都是滿滿的幸福感。跟豐原
廟東原版的比較起來,這間的湯頭比較清爽不油膩。不過廟東的版本聞
起來很香,而且有一股濃烈的胡椒香超級棒!
The broth is rich, savory, and sweet, pairing perfectly with the springy noodles, making each bite a moment of pure bliss. Compared to the original version at Fengyuan Miaodong, this one has a lighter, less greasy broth. However, the Miaodong version has a wonderfully fragrant aroma, and the strong peppery scent is absolutely fantastic!

特別提醒,正老牌清水排骨麵的份量相當扎實,若您食量較小,建議點
餐時提前告知店家,請店家酌量減少麵量,避免浪費食物,一同珍惜美味。
A gentle reminder that the portions at Zheng Laopai Qingshui Rib Noodles are quite substantial. If you have a smaller appetite, it's advisable to inform the staff when ordering, so they can reduce the amount of noodles accordingly, helping to avoid food waste and ensuring we all cherish this delicious meal.
