在鍋中翻騰,發出滋滋的響聲,伴隨著濃郁的香氣,這就是令人垂涎的
鍋氣。
This wok-fried snail stall lacks elaborate decor, featuring only a simple cart and the owner's deft stir-frying. Amidst the roaring flames, the owner dances the wok spatula, tossing snails, minced garlic, chili peppers, and basil leaves in the pan. The sizzling sounds and rich aromas are the essence of the coveted "wok hei."
所謂鍋氣,是食材在高温快炒下產生的獨特風味,它不僅賦予食材焦香,
更讓整體風味提升到另一個層次。而這家生炒螺肉,將鍋氣的魅力發揮得
淋漓盡致。

用餐區只簡單擺了幾張摺疊桌,座位沒有很多,如果尖峰時間來可能要
在旁邊稍等。但因為只賣生炒螺肉一種,所以翻桌其實速度很快。

店裡只有賣兩種產品-小份跟大份,小份100元、大份150元。口味方面
只有辣跟不辣,辣有大、中、小、微四種,不過個人認為應該只是大辣

炒螺肉小的100元,沒想到上一攤草魚湯我兄弟女兒沒有很愛,一講到
炒螺肉都不用叮嚀,像自動排檔一樣自己早就不知道吃到第幾殿了?
這家店的螺肉每個都新鮮飽滿,肉質厚實清脆,吃得出來都是當日最新
鮮的食材製作。因為老闆這家店只賣炒螺肉,經年累月下來這炒功可真
不是蓋的。因為螺肉這一類的食材遇熱會出水,如果火不夠大和炒得不
夠快,肉很容易就會變得又硬又乾癟。

模糊,看來不知道已經貼了多少年?反正大家不用擔心,老闆應該理論上
不會搬走啦~
Wok-fried snails are not only a signature dish of Wenhua Road Night Market but also a beloved staple for many Chiayi locals. Having heard of its fame, I can attest that it lives up to its reputation. While savoring the dish, I noticed a faded relocation notice by the stall, its words blurred by time. It appears to have been there for many years. Rest assured, the owner is unlikely to relocate.
